Asalamu alaykum ladies, I hope you’re well and enjoying the weekend. I thought I’d share this super easy egg salad sandwich I make as part of our meal prep for the week. Whilst I’m making breakfasts for the week I also boil some eggs on the side. This sandwich filler takes no time at all to make and is great for lunches on busy days.
You can make this recipe a couple of different ways and can adjust the recipe to your taste. It’s a very ‘forgiving’ recipe!
Ingredients
8-10 boiled eggs.
2 tablespoons mayonnaise.
1 tablespoon mustard.
freshly ground black pepper.
Method
Boil the eggs, peel them and let them cool.
Whilst eggs are cooling mix together the mayonnaise, mustard and black pepper.
Chop the eggs, and stir through the mayonnaise mix ensuring everything is well coated.
Store in an airtight container in the fridge.

1 tablespoon salad dressing such as ranch.
Freshly ground black pepper.
