Asalamu alaykum ladies,
Last week I was running low on some food staples and I had to prepare iftaar. So I had a quick scan in my food cupboard and came up with this simple chunky tomato sauce I mixed up with some pasta.
One pot, no chopping and inexpensive, this is definitely going to be a go-to recipe for busy homeschool days me thinks!
1 can of plum tomatoes
2 cans of chopped tomatoes
1 tablespoon tomato puree/paste
1 tablespoon Italian herb seasoning
1 teaspoon cumin
2 tablespoons of honey
1/2 cup cooking/single cream
2 cups of shredded cheese
Salt and pepper to taste
1. Throw all the ingredients into a pot except the cream and cheese. Allow the ingredients to boil and then simmer for an hour on low heat. The key to this sauce not tasting like tinned tomato is leaving it to cook on low heat.
2. After the sauce has cooked, turn off the heat and stir in the cream and cheese.
7. Stir through pasta (pasta shells work as the sauce sticks better) and top with more cheese and Italian seasoning. Enjoy!
